I am not sure about you, but at least me and my friends, family members love Italian foods. Pasta, tomato sauce, cheese, good meat, smell of basil.. mm.. simply amazing!
If you are one of us, Italian food lovers, then lasagna must be one of your favorite foods. I cannot say that it is the number one food, but it is one of the best ones! Smell of lasagna has a power to invite the ones you love for a friendly dinner… brilliant taste of it always sets some romantic atmosphere between you and the one you love. I think there must be some sort of magic going on with the secret of good lasagna.
Italian chefs have their own key to successful lasagna. I developed mine! The issue I found with the original lasagna recipes is amount of carbs, also calories. These elements do not allow you to enjoy lasagna as much as you want without thinking too much of the weight gains you may receive together with the 3rd (4th or 5th plate) of delicious original lasagna. Hence, I spent some time on researching about the different lasagna recipes, ingredients, also other Italian foods. I thought about the main ingredients that must always go into the perfect REAL lasagna and the way to make them diet friendly.
The lasagna recipe I came up with was so successful that the ones who tried it, claimed that they never though about eating such a brilliant lasagna. As I revealed that this one is not only rich in taste, but also low in calories, meaning that my guests may have more pieces of this Italian heaven than planned, my friends were absolutely amazed. My man already asked me to make some more lasagna, “what about the next week? Could you make more of it? You know, it’s good for my diet, it’s a perfect muscle food!”- he said. I made a promise to prepare this low cal lasagna more often and satisfy his Italian food cravings. As other foods I recommend in this site, this lasagna is good for lazy cooks: not so much time to spend on preparing it (I managed to make it during the time my man was walking a dog on a rainy eve, so it was quick!), while the taste of final meal seems as if you have studied all the secrets of Italian cuisine.

650g lean ground beef
350g wild boar meat
80g tomato paste (pure)
1 can diced tomatoes with garlic
500g fat free cottage cheese
1 medium zucchini
200g frozen spinach
8 egg whites
12 pieces of whole wheat lasagna noodles
1 cup Parmesan cheese
2 strips celery
14g spring onion
Salt, pepper, chili powder, herbs
- Preheat oven to 175 degrees.
- Cook ground beef until brown, add chopped celery strips and spices.
- Cook the frozen spinach, drain excess water.
- Spray a non sticky baking pan with cooking spray and spread tomato pure on the bottom of the pan.
- Mix the rest of the ingredients, except for the Parmesan cheese and zucchini.
- Slice zucchini lengthwise into very thin slices. Sprinkle slices lightly with salt.
- Lay down the 1/2 of the noodles and top with half of the cottage cheese mixture.
- Layer with the rest of the noodles and top with the other half of the mixture.
- Lastly, layer the zucchini slices, spread Parmesan cheese evenly over the top.
- Bake for 45 minutes.
