Protein Choco Berries cookies

Would you like to keep the fit shape and eat cookies for breakfast, after your workout, before the bed or as a snack together with a glass of milk? If you answered ‘yes’, then I have some good news for you, because my question was a suggestion, rather than a teaser. So set aside 15 minutes, check out if you have all the basic ingredients at your place and go on with the recipe I have for you.

These low calorie, high protein Choco Berries Cookies are perfect for warm sunny mornings, winter evening, or even Christmas eve (esp. if you add dried cranberries, lemon zest and poppy seeds!). Because of eggs, they are very light and pretty soft, if you check the time and do not over bake them. Because of dried berries, they smell amazing. Since you should use Chocolate Chip Protein powder, the combination of chocolate and berries gives you solid, fresh and bright taste. Maybe it sounds weird, but trust me, you will be surprised how delicious these Choco Berries Protein goodies are! I must admit, even while preparing the dough for them, it was hard to resist eating it.. But good news here: you may eat these cookies as soon as they are baked through, it is not a necessity to wait for them to cool down. Thus, you may actually try some as you take the baking plate out from the oven… The feeling of chewing some freshly baked cookies is amazing – isn’t it? I guess not many would argue with that.

Ingredients:

Makes 25 cookies

100ml skim milk

2 whole eggs

1 egg white

120g Chocolate Chip Whey Protein

70g Oat flour

1tsp baking soda

15 g ground Almonds

2tbsp unsweetened shredded coconut

1tbsp stevia sugar (you may add more if you prefer making cookies sweeter)

Unsweetened Dried Raspberries and Blackcurrants

Directions:
  1. Preheat oven to 170 degrees.
  2. Mix together eggs, egg white, protein powder, oats, shredded coconut, stevia sugar, baking soda, skim milk and ground almonds.
  3. As the dough is formed, add dried berries.
  4. Divide mixture into 25 cookies and spread over the prepared baking sheet.
  5. Put in oven for 15-20 minutes. Remove from the oven as soon as the cookies are cooked through, it’s ok if they are a bit soft in the center.
