Spicy Rum And Honey Chicken Breasts

This is my basic, delicious, classical grilled chicken. I came up with this recipe not so long time ago, but since then we are using the same recipe each Saturday for making a perfect BBQ, refeed dinner.

These chicken breasts are quick and easy to make, healthy and flavorful. They are never dry and always covered in golden colour. Oh.. and the smell of them is so good that we always start eating them straight from the grill!

Another good thing is that they taste good the day after! Normally, chicken and other meats become dry and you do not really want to eat them the next day. But this is not a case!

We actually make a bit more, so that next day I can eat it with rice, while my man enjoys it with spaghetti and tomato sauce for lunch.

Talking about tomato sauce… while making these chicken breasts I wanted to substitute the sugary and artificial stuff infused ketchup with something healthy. So I found out a brilliant way to make my own tomato sauce. I recommend you to try it and I am sure you that will use it very often: with BBQ, spaghetti, potatoes, rice.. whatever! You will love it!

So: take a can of diced tomatoes in their juice, add some soya sauce, spring onions, garlic, salt and pepper, chilli, cinnamon, fresh dill and other herbs, lemon juice and a bit of vinegar. Mix it well and enjoy! That’s it: quick and simple, while the taste of it is better than you can imagine.

Makes 5-6 servings

1 kg boneless skinless chicken breasts

60g natural honey

80ml white wine vinegar (or apple cider vinegar)

3 tbsp Dijon mustard (sugar free)

1/4 cup of rum

1 onion

4 cloves of garlic

1 tbsp lemon juice

2 chilli peppers (may be skipped, if you want it less spicy)

salt, pepper, herbs


  1. Crush the garlic cloves and finely chop the onions.


  2. Chop the chicken into small cubes.
  3. Prepare the marinade: whisk all of the ingredients together, add the chopped onions and crushed garlic.
  4. Add the chicken to the marinade, cover and place in the refrigerator for 4 hours or overnight.


  5. Preheat the grill to the high heat (you may also use oven) and add the marinated chicken breasts. Don’t overcook them, so that they remain soft and moist.
    • Tip: if you are a fan of jalapenos, add couple of those to the grill and bake them together with your chicken.
