Whole Wheat pancakes

Whole Wheat pancakes – the recipe that my man came up with! These were served as a surprise post workout meal for me after the intensive workout on a cheat Saturday (read more about it: )

Easy to make, healthy batter will cheer up your weekend brunch. Eat them with home made jam, yogurt or try it my way: with some salted salmon and smoked trout. Enjoy and feel no guilt.

Makes 16-17 pancakes

2 eggs

a bit of extra virgin olive oil

1 tsp of sweetener (you may use sugar)

a bit of salt

300ml water

300ml skim milk

200g whole wheat flour

100g grains

50g Vanilla Protein powder

  1. Whisk the eggs, milk, water, flour, grains, protein powder, sweetener and salt in a large bowl.
  2. Pour the batter into the pan (coat it with the olive oil, use a cooking brush). Tilt the pan to move the mixture around for a thin and even layer. Leave to cook undisturbed, for around a minute. Flip the pancake and leave for another 30 seconds before turning out onto a warm plate.
