Easy to make, healthy batter will cheer up your weekend brunch. Eat them with home made jam, yogurt or try it my way: with some salted salmon and smoked trout. Enjoy and feel no guilt.
Makes 16-17 pancakes
a bit of extra virgin olive oil
1 tsp of sweetener (you may use sugar)
a bit of salt
300ml skim milk
200g whole wheat flour
50g Vanilla Protein powder
- Whisk the eggs, milk, water, flour, grains, protein powder, sweetener and salt in a large bowl.
- Pour the batter into the pan (coat it with the olive oil, use a cooking brush). Tilt the pan to move the mixture around for a thin and even layer. Leave to cook undisturbed, for around a minute. Flip the pancake and leave for another 30 seconds before turning out onto a warm plate.
